Ana Mandara/ Executive Chef Khai Duong
Using family recipes, Executive Chef Khai Duong has created original modern Vietnamese cuisine that he's showcasing at the newly open Ana Mandara Restaurant in San Francisco. His success has come from his ability to prepare classic Vietnamese recipes using French technique and reflecting American style. Duong combines culinary inspiration from his native village of Nha Trang (on the south central coast of Vietnam) with world-class experience.
Increasingly drawn to the culinary arts in his youth, Duong broadened his formal academic studies (in engineering) and attended Le Cordon Bleu Academie Culinaire De Paris where he received a Grand Diploma, Summa Cum Laude, in Classical French Cuisine and Patisserie and graduated first in his class. He subsequently earned an Advanced Certificate of Cuisine and Patisserie from the Ecole Lenotre Francaise Gastronomique in Paris and then received a Diploma of Connoisseur in Wine from the Academie Du Vin, also in Paris.
Duong's professional experience includes stints at the Maui Prince Hotel in Hawaii, the Boca Raton Resort Hotel (Mobil 5 star/5 diamond) in Florida and Le Bernardin in New York City where he worked under Chef Le Coze, an internationally acclaimed three star chef and restaurateur. Most recently he worked at Le Colonial in Beverly Hills where he was at the forefront of introducing upscale Vietnamese cuisine to the American palate. The restaurant was voted "The Best New Restaurant" by the City of West Hollywood Chamber of Commerce.
Other honors that Duong has garnered include an invitation to appear on the PBS television series Great Chefs of America and the Great Chefs of New England Award from A & P International Foods. Duong has also assisted in the preparation of a dinner served at the Beard House in New York City.

Chef Khai, 38 years old, is married and has a young daughter. When not in the kitchen at Ana Mandara, he enjoys spending time with his family, traveling and experimenting at home with new recipes and ingredients.
